Description

A hearty bean soup with a little hot "kick".

Ingredients

  • 1 lb navy beans
  • 1 t salt
  • 1 lb ham pieces
  • 1 large onion (chopped)
  • 1 cn rotel chiles and tomatoes
  • 1 clv garlic (chopped)
  • 1⁄4 c lemon juice
  • 2 q water

Instructions

Soak beans overnight. Drain beans, add water and ham (I use a Honey Baked Ham bone). Cook
slowly for three hours. Add remaining ingredients and simmer two more hours.

Notes

Although this recipe takes a long time, it freezes well and makes several meals.
